SANTA CRUZ SPICY SOUTHWESTERN  SUMMER PASTA SALAD

 

3 cups Bowtie Pasta
1 /4 cup olive oil
1/4  cup red wine vinegar
2 TBLSP MILD SANTA CRUZ CHILI POWDER
1/3 cup finely chopped fresh cilantro leaves
1 can black beans rinsed and drained
2 green bell pepper chopped
1 red bell pepper chopped
 
2 or 3 medium diced chopped tomatoes
1 cup shredded mozzarella cheese

Bring large pot lightly salted water to a boil.  Add pasta cook 8-10 minutes  or until al dente. Rinse in cold water - drain. In a large bowl whisk together oil, red wine vinegar, chile powder,and cilantro.  Add peppers, tomatoes stir to coat.  Add pasta, cheese, beans, and toss. Let it chill till ready to serve.
